The Ultimate Wild Turkey Taco Experience: Slow-Cooked Perfection

Unfortunately, most Wild Turkey Legs and thighs usually end up left in the field for coyotes or thrown out, please don’t do this! Slow-cooking wild turkey legs and thighs is one of the best ways to make tough cuts tender. The connective tissue breaks down over several hours and leaves you with rich, flavorful shredded meat that’s perfect for tacos.


Slow-Cooked Wild Turkey Leg & Thigh Tacos

Servings

Time

  • Prep: 15 minutes
  • Cook: 6–8 hours (slow cooker)

Ingredients

Turkey

  • 2–4 wild turkey legs and thighs
  • 1 tbsp olive oil
  • 1 tsp salt
  • 1 tsp black pepper

Braising Liquid

  • 1 large onion, sliced
  • 4 cloves garlic, minced
  • 1 cup chicken broth
  • ½ cup orange juice (fresh or bottled)
  • 1 lime, juiced
  • 1 tbsp apple cider vinegar

Taco Seasoning

  • 2 tsp chili powder
  • 1 tsp smoked paprika
  • 1 tsp cumin
  • 1 tsp garlic powder
  • ½ tsp oregano
  • ½ tsp onion powder
  • ½ tsp cayenne (optional)
  • 1 tsp Everglades seasoning (optional Florida twist)

Finish

  • 1 tbsp butter or duck fat
  • Salt and pepper to taste

Instructions

1. Sear the Turkey (Optional but Recommended)

Heat olive oil in a skillet over medium-high heat.
Season the legs and thighs with salt and pepper and sear each side for 2–3 minutes until browned.

This step adds deeper flavor.


2. Build the Slow Cooker

Place sliced onions and garlic in the bottom of the slow cooker.

Add:

  • chicken broth
  • orange juice
  • lime juice
  • apple cider vinegar
  • taco seasoning

Stir lightly.

Place turkey legs and thighs on top.


3. Slow Cook

Cook on:

LOW: 7–8 hours
HIGH: 4–5 hours

The meat should become fall-apart tender and pull away from the bones.


4. Shred the Meat

Remove the turkey pieces and let cool slightly.

  • Pull the meat from the bones
  • Remove tendons and tough connective tissue
  • Shred with two forks

Return shredded meat to the slow cooker.


5. Reduce & Finish

Stir in butter or duck fat.

Cook on HIGH for 15–20 minutes uncovered so the meat absorbs the juices.

Taste and adjust salt if needed.


Taco Assembly

Serve on warm corn or flour tortillas with:

  • shredded cabbage or lettuce
  • diced onion
  • fresh cilantro
  • avocado slices
  • cotija cheese
  • squeeze of lime
  • chipotle crema or hot sauce

Pro Tip (Wild Turkey Specific)

Wild turkey legs contain a lot of sinew and tendons, which is why slow cooking works so well. When shredding, just pull those long white tendons out—they slide out easily once fully cooked.


🔥 Optional Upgrade (Highly Recommended)
After shredding, throw the meat in a hot cast iron skillet for 3–4 minutes to crisp the edges before putting it in tacos. It adds incredible flavor.
